Tiramisu' with berries

Hello hello!!

How many of you know the classic Italian dessert... the tiramisu? I'm sure, most of you. Strong coffee flavor mixed with a sweet mascarpone cream and cookies, everything dusted with cocoa... delicious!! Well, maybe you are among those who don't really like coffee, or chocolate. Then I have a different version for you! A Berry Tiramisu'! It's a rich combination of flavors that you need to try...
This is my recipe:


TIRAMISU with BERRIES

 INGREDIENTS (3-4 people)

for the cream:

  • 1 lbs Mascarpone cheese (room temperature)
  • 4 eggs
  • 1 cup Sugar
  • "Savoiardi" cookies (Italian ladyfingers)
  • 1 cup pineapple juice

for the berry-sauce:
  • 1 cup fresh strawberries
  • 1 cup blackberries
  • 1/2 cup sugar
  • 1 lemon

  1. Separate the eggs: yolks and whites in two different bowls.
  2. Mix the sugar to the yolks until it becomes fluffy and pale yellow (the result will be better and faster if you use an electric mixer).
  3. Whisk the mascarpone to the egg mixture until it forms a luscious cream.
  4. Beat the egg whites in a separate bowl until firm (if you put the bowl upside down, they will not fall out).
  5. Fold the egg whites gently to the mascarpone cream.
  6. Refrigerate for a couple hours before serving.
  7. To prepare the berry sauce you need to first wash and clean the berries. Cut them in half and cook in a pan on low heat with the sugar and lemon juice, mix them from time to time.
  8. Cook 15 minutes, smash the berries with a potato-masher or a fork. 
  9. Let the sauce cool down before serving it.
  10. When both cream and sauce are cold, you can serve them in bowls together with a ladyfinger cookie dipped in the pineapple juice.
